Ingredients

  • 4 small sweet potatoes (or 1 or 10- depends on how many you’re feeding
  • Olive oil to drizzle

Whatever you want to stuff your stuff with. I used-

  • 1 cup mushrooms, chopped
  • 1 zucchini, diced
  • 1/2 red onion, diced
  • 1/2 red capsicum, diced
  • Big handful kale, shredded
  • Big handful red cabbage, shredded

Directions

Preheat oven to 180C. Line tray with baking paper. Drizzle sweet potatoes with olive oil and bake for 60 – 90 minutes, until soft to touch.

Combine all stuffing ingredients and sauté in a pan until its about ¾ cooked then remove.

Cut cooked sweet potatoes down the centre, stuff with sautéed filling, sprinkle cheese and put them back in the oven on 200C for about 15 minutes.
