By packing lunches full of fruit, veggies, complex carbs and lean meats you ensure your little ones have the energy to get through the day. Pastry Free Mini Quiche
Swap out your kids sandwiches for a tasty mini quiche. Whisk together eggs and a dash of milk. Add any combo you wish – bacon and grated broccoli florets, brown onion and roasted pumpkin or rosemary and tomato. Pour the mixture into cupcake tins and bake in the oven on 180c for approximately 12 minutes or until lightly golden.
Pita pockets are a fun way to eat your veggies. Cut the pita in half and stuff them with grated carrot and cucumber, spinach and marinated beef strips. Finish them off with a little dash of tzatziki for a satisfying snack.
Healthy Nutella Bites
For a little sweet treat full of fibre, make chocolate bliss balls. Blend almond meal, dates and cacao powder together in the food processor until well combined. Roll into tablespoon sized balls and refrigerate until firm.
Quesadillas are another healthy lunch idea. Fill them with beans, diced tomato and cheese. Lightly pan fry, let cool and then slice into wedges. Serve with homemade guacamole. For the guac simply mash some avocado with lime juice and season with salt and pepper.
Rice Paper Rolls
Fill rice paper rolls with shredded lettuce, grated carrot, sliced cucumber and fresh mint. Add whatever seasoned meat you wish and roll them up. Serve with some Vietnamese dipping sauce or sweet chilli.
Homemade Hummus and Veggie Sticks
For a super simple homemade hummus put one can of chickpeas, 1 garlic clove, olive oil, lemon juice, tahini and cumin into a food processor. Add water if needed to achieve the desired consistency. Pair this with fresh vegetable sticks for a great morning tea snack.
