• 500g mince (Alana usually uses turkey or beef)
  • 1 tablespoon diced chilli
  • 1 x zucchini – grated
  • 1 x carrot – grated
  • 1 can re-fried beans
  • 1 small jar Mexican salsa
  • 1 packet taco seasoning (try the low salt version)
  • Mountain bread wraps
  • ½ cup grated cheese


Pre-heat oven to 180c.

Brown mince and add chilli, grated carrot and zucchini.  Add mexican salsa, taco seasoning and refried beans. Mix well and cook.

Lay mountain bread in a flat dish.  Spread a layer of mince/vegetable mix followed by another layer of mountain bread and continue this process to the top of the dish.  On the last layer of mountain bread spread some mexican salsa and a small amount of grated cheese on top.

Cook in the oven for 15 minutes to crisp the top layer and melt the cheese.

Serve with smashed avocado, lettuce and chopped tomatoes.
