• 500g lean minced beef
  • 1 egg, beaten
  • 1 small onion, grated coarsely or chopped finely
  • ¼ cup finely chopped mushrooms
  • ¼ cup chopped parsley
  • 1 tbsp tomato paste
  • 1 cup fresh wholemeal or wholegrain breadcrumbs
  • For cooking – 1 tsp olive, sunflower, soya bean or canola oil


  1. Combine all ingredients except for oil. Using slightly moistened hands, form mixture into 12 or more meatballs and place on a plate. Cover and set aside refrigerator until ready to cook.
  2. Preheat oven to 200°C. Using pastry brush, brush a non-stick baking tray sparingly with oil.
  3. Spread meatballs out on tray.
  4. Bake in preheated oven until cooked through and nicely browned, 15 – 20 minutes. If not using at once, store in an airtight container in refrigerator.

Note: Baking meatballs instead of frying them reduces the amount of fat you use.
