• 2 cups plain flour
  • 8g dry yeast
  • 1 tsp caster sugar
  • 1/2 tsp salt
  • 2 tbs olive oil
  • 3/4 cup warm water
  • 4 tbsp tomato paste
  • 1 punnet of cherry tomatoes; halved
  • handful of fresh basil leaves
  • 200g bocconcini; halved


  1. Combine flour, yeast, sugar and salt in a mixing bowl and add the oil and water.
  2. Use a round-bladed knife to mix the ingredients until combined. Use your hands to bring the dough together in the bowl.
  3. Turn the dough onto a lightly floured surface and knead for 10 minutes until smooth.
  4. Return the dough mix to the bowl, cover with plastic wrap and leave for 30 minutes or until dough doubles in size.
  5. Remove dough from bowl and gently knead for 1 minute.
  6. Roll the dough with a rolling pin until about 2-4 cm thick, then cut or shape into Christmas trees and place on a baking tray.
  7. Preheat the oven to 200 degrees.
  8. Spread the tomato paste over the pizza bases and then decorate with tomatoes, basil and bocconcini.
  9. Bake in a oven for 10-15 minutes, or until cheese is melted and the crust is slightly brown, and then serve immediately.
