Ingredients

  • 4 English muffins split in half (wholemeal’s the best choice)
  • 2½ tbsp tomato paste
  • 4 button mushrooms, sliced thinly
  • 50 – 100 g lean ham, chopped
  • 125g grated low or reduced-fat cheese
  • ½ – 1 cup chopped fresh pineapple
  • ¼ red capsicum, chopped
  • Pinch of dried oregano or fresh oregano leaves (optional)

Directions

  1. Pre heat oven to 200°C.
  2. Spread tomato paste thinly over muffins.  Arrange remaining ingredients on top.
  3. Pop onto a baking tray. Bake in pre heated oven until pizza base is crispy and cheese is melted, 12 – 15 minutes.
