• 500g beef or pork mince (you can combine the two)
  • 1 large carrot (grated)
  • 1 red capsicum (diced)
  • 1 corn cob (cut the kernels off the cob)
  • 1 onion (diced)
  • 250 grams mushrooms (chopped)
  • 1 packet taco seasoning – try the low salt version
  • Garlic to taste
  • Chilli to taste
  • Coriander to taste


Cook the onion, garlic and chilli in a fry pan over medium heat for 1 – 2 minutes.

Add mince and brown. Add remaining vegetables to the pan and cook along with the taco seasoning until the vegetables are tender.

Serve with smashed avocado (mixed with a squeeze of lime and coriander) and warmed taco shells.
