• 500g lean chickens mince
  • 1 carrot, grated
  • 2 – 3 spring onions, sliced finely
  • 2 – 3 tsp sweet chilli sauce
  • 3 tbsp chopped parsley or coriander
  • 1 egg
  • 1 cup fresh wholemeal or wholegrain breadcrumbs


  1. Combine all ingredients. Mix using hands or a wooden spoon until. Wash hands. Using slightly moistened hands, form mixture into 12 or more meatballs and place on a plate. Cover and set aside refrigerator until ready to cook.
  2. Preheat oven to 200°C. Using pastry brush, brush non-stick baking tray sparingly with oil.
  3. Spread meatballs out on tray. Bake in preheated oven until cooked through and nicely browned, about 20 minutes. If not using at once, store in an airtight container in refrigerator.
