Nectarine Fruit Flan


  • 1 store-bought or home-made pastry case
  • 3-4 nectarines, thinly sliced (or peaches if you prefer)
  • 3 teaspoons gelatine
  • 3 tablespoons water
  • 2 ½ cups Greek Yoghurt


  1. Place water in a heatproof cup and sprinkle gelatine over the top.
  2. Stand for 5 minutes. Place cup in small saucepan with enough water to come halfway up the cup.
  3. Place over a low heat and warm until gelatine has dissolved.
  4. Remove cup from saucepan and whisk gelatine into yoghurt. Spread over pastry case and arrange fruit slices on top.
