Ingredients

  • 1 cup milk
  • 1 egg; beaten
  • 2 tsp vanilla extract
  • 1 cup plain flour
  • 2 tbsp castor sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp butter
  • 2 punnets of raspberries
  • 2 large banana
  • 4 blueberries
  • 8 white marshmallows
  • whipped cream

Directions

  1. To make the pancakes, whisk the milk, egg and vanilla together in a small jug.
  2. Sift the flour, sugar, baking powder and salt into a large mixing bowl and stir until combined. Make a well in the centre and add the milk mixture. Whisk lightly to make a smooth batter.
  3. Heat a large non-stick fry pan on a medium heat. Melt a small amount of butter to coat the pan. Pour a quarter of the batter into the pan to create a large pancake. Cook for 3 to 4 minutes until bubbles appear on the surface. Turn and cook for 3 minutes on the other side. Remove to a plate and continue to cook the remaining batter.
  4. Place each pancake on a plate. Use flattened marshmallows and a blueberry cut in half for the eyes and a raspberry for the nose. Continue to decorate with raspberries for the hat, sliced banana for the beard and whipped cream for the trims.
