To make those cute shamrock shapes for the top of each skewer, green capsicum work best. There are two ways to make these:

  • You can use a small, sharp knife.  Choose a few large green capsicum with nice, broad sides. Slice off the sides and use the knife to carefully to cut out shamrocks.
  • You can also buy smaller green capsicum, and simply use a knife to slice them crosswise (horizontally) into thin “rings.”Green capsicum slices actually look amazingly like shamrocks! When you thread these on the top of each skewer, you can even add a tiny piece of capsicum underneath, to look like a stem.

For serving, we recommend a festively green dip. Especially if you’re serving a leprechaun, you have to go with green!
