Strawberry Muffins Recipe


  • 2 cups of self-raising flour
  • ½ cup sugar
  • 1 egg lightly beaten
  • 1 cup milk
  • 4 tablespoons melted butter
  • 1 punnet strawberries, chopped
  • 2 tbls flaked almonds


  • Preheat oven to 200º C. Lightly grease a 24 capacity mini muffin tin, or a 12 capacity large muffin tin.
  • Mix all dry ingredients, add milk, egg and melted butter, mix lightly. Stir in the chopped strawberries; do not over mix as mixture is meant to be lumpy.
  • Spoon into the muffin tins until ¼ full.
  • Top with flaked almonds then and bake for 20 to 25 mins. Test by inserting a skewer until it comes out clean.
  • Leave to cool in the tin for 5 minutes before turning onto a wire rack to cool.
