Ingredients

  • 3 cups cooked brown rice
  • 1 carrot, grated
  • 1 stick celery, chopped
  • 1 small red capsicum, chopped
  • 1 cup chopped pineapple
  • Small cubes of low or reduced-fat cheese
  • Dressing:
    • 1 tsp Dijon mustard
    • 1 tsp honey
    • 1 tbsp lemon juice
    • 1 tbsp olive oil

Directions

  • To make dressing: Place mustard and honey in small bowl and mix using a fork. Whisk in the lemon juice and oil and serve at once.
  • To make salad: Combine all ingredients. Add dressing and mix well. If not using at once, store in an airtight container in refrigerator.
