Ingredients

  • 1 cup sweet potato, diced
  • 1/4 cup mango chutney
  • 2 tablespoons lime juice
  • 1 teaspoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1 tablespoon garlic, crushed
  • 1/2 cup spanish onion, sliced
  • 2 cups lettuce, chopped
  • 1 cup spinach, chopped
  • 400g green beans, cooked
  • Wholemeal pita bread

Directions

  1. Boil sweet potato for 5 minutes until cooked. Cool.
  2. Combine chutney and next 5 ingredients in a large bowl. Add sweet potato, 1/4 cup onion and beans.
  3. Stir well to coat.
  4. Place spinach and lettuce mix on each of 3 plates.
  5. Top with bean mixture and sprinkle evenly with remaining onion.
  6. Serve with half a wholemeal pita bread.
