Ingredients

  • 1 cup cracked wheat (burghul)
  • 2 large ripe tomatoes, diced
  • 1 small cucumber, diced
  • 3 spring onions, finely sliced
  • 1 cup parsley, finely chopped
  • 1 cup mint, finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Directions

  1. Cover the cracked wheat with cold water and soak for 15 minutes.
  2. Strain through a sieve and squeeze out excess moisture.
  3. Mix with remaining ingredients and serve chilled.
