• 400g cooked chickpeas or no added salt canned chickpeas, drained
  • 1 cup grated zucchini, carrot or pumpkin
  • ¼ red capsicum, chopped finely
  • 3 spring onions, chopped finely
  • 1 – 2 garlic cloves, crushed (optional)
  • 1 egg
  • 2 – 3 tsp sweet chilli sauce
  • ¼ cup chopped coriander or 1 tsp ground coriander
  • ½ tsp ground cumin
  • 3 – 4 tbsp wholemeal flour or chickpea flour or a little more if needed
  • For cooking – 1- 2 tsp oil


  • Mash chickpeas with a fork or use a food processor or food mill to grind them. Transfer to mixing bowl and add all ingredients except for oil. Using a wooden spoon (or clean hands) mix thoroughly.
  • Cover and set aside in refrigerator until ready to use (this allows mixture to become firm). When ready to cook, form into size of burger that suits your needs and add to pan.
  • Heat non-stick frying pan over medium – high heat. Add oil sparingly to pan heat. Cook burgers until cooked through and golden brown and cooked through, 2 – 3 minutes each side.
