• 4 cups watermelon, cubed
  • 2 cups cherries, pitted
  • 1/2 cup loosely packed mint leaves, torn
  • 1/4 cup water
  • 1/4 cup sugar
  • 1/2 dried lime, smashed
  • 2 green cardamom pods, smashed
  • 1/2 cup toasted pistachios, roughly chopped
  • 1/2 tsp rosewater
  • salt, to taste


  1. Simmer the water, sugar, dried lime and cardamom in a small saucepan until the sugar dissolves and the lime becomes fragrant, about 3 minutes. Strain and reserve the syrup. Chill the syrup.
  2. Toss the watermelon and cherries in a large bowl. If desired, chill the fruit.
  3. Right before serving, dress fruit with the chilled syrup. Toss in the mint. Season to taste with salt. Toss in the pistachios. Sprinkle the rosewater over the salad and serve.
