• 1 ½ cups wholemeal self-raising flour
  • 1 tbsp sugar
  • 1 egg
  • Few drops vanilla extract or essence
  • 1 cup low or reduced-fat milk


  1. Using wooden spoon combine all ingredients in mixing bowl. Cover and set aside in refrigerator until ready to cook.
  2. Heat large non-stick frying pan over medium – high heat. Cook pikelets in batches, adding heaped tablespoonfuls of mixture to hot pan.
  3. Cook pikelets until bubbles form and break on surface on mixture. Using an egg lifter, flip pikelets over and cook until lightly browned.
  4. Remove from pan and place on a plate. Cover pikelets with clean tea towel to stop them drying out.
