There are many sprouts to choose from including alfalfa, mung beans, snow pea shoots, bean shoots, mustard cress, and more. Use to liven up salads, sandwiches, and wraps.
Look for fresh crisp sprouts in the refrigerated section of your grocery store. Select fresh crisp white bean sprouts with no sign of moisture or softness. Avoid sprouts with dark brown or grey discolouration at the shoots – if they appear dry or mushy they may be either too old or have been mishandled in transport.
Sprouts are a good source of dietary fibre and vitamin C.
